Meatloaf Recipe Meal

I enjoy making meatloaf mainly during Thanksgiving as a tradition.

I shape it like a loaf of bread & place it into a pan. Cover on top with aluminum foil so it cook properly.

Heat In Oven: 375 degrees F. for about 40mins

 Ingredients:

1)  Ground Meat

2)  One Onion (chopped into small pieces)

3)  Goya Adoba seasoning

On the side

-Lettuce

-Avocado

-Potato pieces

-Tomatoes

-Salad Dressing

Sauce:

-Ketchup

- Salt

-Pepper

Sugar Cookies Recipe

This is a great treat that can make about 34 cookies. It is so good & easy to make. I really like having this as a nighttime dessert. Yum! A great recipe for the holidays, & a cute gift to give to friends and family.

Heat In Oven: Bake to 325 degrees F. till barely golden.

 Ingredients:

 1)  (1 cup) 2 bars of un-salted butter

 2)  2/3 cup + 3 tablespoons of granulated sugar

 3)  2 cups + 1 tablespoon all purpose flour (spooned & leveled)

 4)  Topping options: peanut butter, powder sugar, sprinkles, vanilla or chocolate icing etc.

Banana Bread Recipe

 I provided two options, the first one is a faster recipe with less ingredients & the second one as more but both taste delicious.

Heat In Oven: Bake to 350 degrees F. for about 45-55mins (butter on pan). 

Pan size: 9" x 5"

Ingredients

 1)  2 ripe Bananas (mashed)

 2)  1 egg

 3) 1 Box of Yellow cake mix (follow steps on box)

or

 1) 1/3 Cup of Butter (Melted)

 2)  3/4 Cup of Granulated Sugar 

 3)  2-4 Bananas (Very Ripe)

 4)  1 egg

 5)  1 tsp of Vanilla Extract

 6)  1 tsp Baking Soda

 7)  1/2 tsp Baking Soda

 8)  1/2 tsp Ground Cinnamon

 9) 1/4 tsp Nutmeg

10) 1 1/2 Cup of flour

 11)  Pinch of salt & Topping options: Chocolate chips, Chocolate or Vanilla  Icing, Peanuts, etc.

Of course when baking I believe you should just make sure you keep an eye out to make sure it cooks well. And have fun!

Tortilla Recipe

This is a special recipe my grandma taught me to make. I can have so many! Especially if you add Queso Fresco (Mexican cheese). 

Cook: 30-60 seconds each side on pan.

Ingredients:

1) 2 Cups of all-purpose flour

2) 1/2 teaspoon of Salt

3) Baking Powder

4) 3 tablespoons of Olive Oil

5) 3/4 Cup of Water

Chicken & Rice

I have this a lot for dinner. It so easy to make & can last for several days. 

Cook or Heat In Oven: Chicken for about 35mins to 1hr if in a fryer machine or oven at 375 degree F. for about 35-40mins. Sometimes I cook the meat on a pan for about the same amount on high, then slowly lower the heat. You can also add two slits in each chicken pieces to cook better.

Ingredients:

1)  Brown or White Rice

2)  Pack of chicken breasts (cut the meat in half if needed) or you can buy chicken legs.

3)  One egg to add & dip the chicken breasts into the bread crumbs.

3)  Bread crumbs (Progresso brand)

4)  Olive Oil

5)  Sometimes I like to add on the side some lettuce, corn , tomatoes & cucumbers.

6) Keep flipping chicken pieces till golden brown.

Graham Cracker Toffee Recipe

This is only 3 ingredients & its a sweet dessert.

- Pan & aluminum foil. 

Bake In Oven: 400 degrees for about 5-6 mins (put chocolate or topping of your choice at the end).

Ingredients:

1)  40 salted saltine crackers or enough to line your pan 

2)  1 Cup unsalted butter 

3)  1 Cup packed brown sugar

4) Optional toppings: nuts, milk chocolate or semisweet chocolate chips

Crepes Recipe 3/9/23

 This was my first time making crepes & it reminded me of an ice cream cone or a fortune cookie.

Ingredients:

1) 1 Cup of all purpose flour

2) 1/2 tsp of salt

3) 2 large eggs, room temp

4) 1 Cup of milk, warm (about 1min in microwave)

5) 3 tbsp of melted butter, room temp

6) 1/4 Cup of water'

7) 2 tbsp of cooking oil, for the skillet but I used coconut oil (thin layer of it).

- Medium low heat on stove

- Flat Pot

- Cook both sides for about 1 min each

- A ladle for easier measuring

- Move pot to the side when putting the mixture in & angle it side ways.

You can add so much to this crepe wrap such as nutella, powder sugar, all kinds of fruits and more.

Avocado Desert Recipe

 This is simple & something unique to try. A nice sweet treat for the summertime.

Ingredients:

1) I used two ripe avocados, use as many as you like. Cut them into squares or mash them. 

2) Sweetened Condensed Milk

3) Crushed Ice

A bowl or a cup with a spoon.

Mix it & enjoy!

Another one of my favorite summer treats is watermelon & squeezed lemon on top. It’s so refreshing & it makes the watermelon extra sweet.

🍋 Lemon Bar Squares Recipe 

Such a yummy, sweet & fun dessert treat. I like to keep the lemon bars in the fridge after the baking is done. It just solidifies everything and tastes so good.  

Preheat 350 degrees F. for 15 mins & bake the crust first, then another 20 mins with everything together. 

This recipe makes about 18-22 lemon bar squares.

Ingredients:

Lemon Bar 

1) 4 eggs

2) 2 Cups of flour 

3) 1 1/2 Cup white sugar 

4) 3 lemons 

Crust 

1) 2 Cups of flour 

2) 1 Cup of white sugar 

3) 1/4 tsp salt 

4) 1 tsp powdered sugar 

5) 2 sticks of butter unsalted 

6) 1 tsp vanilla extract 

Put crust in fridge for 5 mins, then put filling on top together and bake about 20 mins. 

Gentle sprinkle powder sugar on top after the lemon bars have settled in the fridge for a bit like 30 mins or an hour. Enjoy!!! 

Keep in fridge if you would to have them last for about a week.

Chocolate Chip Cookies

The classic cookie recipe. This recipe makes about 18 chocolate chip cookies.

Keep dough in fridge for about 30 mins.

- Pan & aluminum foil. Spray pan.

Preheat 375 degrees F. for 10-15 mins 

Ingredients:

1) 3 Cups all purpose flour

2) 1 teaspoon baking soda

3) 1 teaspoon fine sea salt

4) 2 sticks unsalted butter, cool room temperature 

5) 1/2 Cup lightly packed light brown sugar

6) 2 teaspoons vanilla

7) 2 large eggs, room temperature

8) 2 Cups chocolate chips

Orange Pumpkin Peppers

With this recipe you can change & play around with what you put inside the peppers. 

I did this for Halloween because of the color & Jack O Lantern shape. 

- Pan & aluminum foil. Spray pan.

Preheat 375 degrees F., and bake for 30 mins 

Ingredients:

1) 3/4 Cup White Rice 

2) Black beans or any beans you would like. 

3) Tomatoes or guacamole sauce dip.

4) Sprinkle shredded cheese on top.

5) 2 Tablespoons butter or oil

6) 1/2 Cup diced onion

7) Salt ___________________________________________________________________________

Homemade Cinnamon Bagel Recipe (No Yeast).

Preheat oven for 375 degrees F. & once ready set timer for 25mins.

Makes about four bagels. 

Ingredients:

1) 2 cups of all purpose flour

2) 1 whole egg

3) 2 teaspoons of baking powder

4) 3/4 of salt

5) 1 tsp of warm water

6) 1 cup of milk

7) 1 tsp sugar

8) 1 tsps ground cinnamon 

9) Bagel seasoning like Sesame seeds.  

I added egg wash around the the tops of the bagels before putting them in the oven. And cooking spray + a cooking pan.

(If you have greek yogurt & yeast for a more soft & fluffy bagel)

Optional: I left the dough in fridge overnight.

Grinch Sugar Cookies

Preheat oven 340 degrees F. Line cookie sheet with parchment paper.

Ingredients:

-  Two sticks of butter (room temp or add into a bowl of warm water)

- 1 1/4 cups of granulated sugar (extra sugar for rolling)

- 2 eggs

- 1 tablespoons of vanilla extract

- 2 teaspoons of baking powder

- 2 teaspoons of baking powder

- 2 1/2 cups of all purpose flour

- heart sprinkles or icing (red food coloring)

Directions:

1) In a stand mixer  with paddle attachment, mix together your butter & sugar until light & fluffy.

2) Add your eggs & vanilla extract & mix well.

3) Add in baking powder & give a quick mix before adding in your flour.

4) Scoop your cookie dough into some sugar & top with a heart sprinkle or add red icing at the end.

5) Baking for 10-12 mins, then allow cookies to cool on the pan before enjoying.

Pumpkin Pie Recipe

Preheat oven to 425 degrees F. for 15mins. Then, reduce temp. to 350 degrees F. & bake for 40-50mins longer or until pie is set. 

Ingredients: 

- 9" or 19" pie crust

- 3/4 cup granulated sugar

- 1 teaspoons ground cinnamon

- 1/2 teaspoon ground ginger

- 1/4 teaspoon ground cloves

- 2 large eggs

- 15 ounce can canned pumpkin or fresh pumpkin puree

- 12 ounce can evaporated milk

Directions:

1) In large bowl beat the eggs & pumpkin together.

2) In a separate bowl, combine the sugar, cinnamon, salt, & gloves, & add to pumpkin mixture. 

3) Gradually stir in the evaporated milk. Then, add into the unbaked pie shell crust. 

4) Add into oven & then take out once done & cool completely on a wire rack. Serve with whipped cream & caramel pecan topping, if desired.
